Preparation and Cooking

    Prepare the Fries

    Peel and cut the potatoes into fries. Soak them in cold water for at least 30 minutes, then drain and pat dry.

    Prepare the Haddock

    Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs and everything bagel seasoning.

    Bread the Haddock

    Dredge each haddock fillet in flour, then dip in the beaten eggs, and finally coat with the panko mixture.

    Fry the Haddock

    Heat vegetable oil in a large skillet over medium-high heat. Fry the breaded haddock fillets for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

    Fry the Fries

    In the same oil, fry the soaked and dried potato fries until golden and crispy, about 5-7 minutes. Drain on paper towels and season with salt.

    Serve

    Plate the fried haddock with the hand-cut fries. Serve with honey mustard tartar sauce and house ketchup on the side.
