    Prepare the Fries

    Cut the potatoes into thick strips to make hand-cut fries. Rinse them in cold water and pat dry. Heat oil in a deep fryer or large pot and fry the potatoes until golden brown. Season with salt and set aside.

    Slice the onion and sauté in olive oil over medium heat until caramelized and soft. Set aside.

    Season the teres major steak with salt and pepper. In a hot skillet, sear the steak on each side for about 3-4 minutes until cooked to your desired doneness. Remove from heat and let it rest before slicing thinly.

    In a saucepan, combine heavy cream and smoked gouda. Heat over low until the cheese is melted and the mixture is smooth. Stir in demi-glace and mix well.

    Slice the French baguette in half and fill with sliced steak, sautéed onions, and drizzle with smoked gouda cream. Serve with hand-cut fries and house ketchup on the side.
