Make the Filling
In a large mixing bowl, combine the shredded chicken, pepper jack cheese, black beans, corn, chopped cilantro, and diced jalapeno. Mix well and set aside.

Prepare the Dough
Use pre-made empanada dough or make your own by mixing flour, water, butter, and a pinch of salt. Roll the dough into circles about 4-6 inches in diameter.

Assemble Empanadas
Place a spoonful of filling on one half of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by crimping with a fork.

Cook the Empanadas
Heat oil in a pan over medium heat. Fry the empanadas for about 3-4 minutes on each side or until golden brown. Alternatively, bake them at 375°F (190°C) for 20-25 minutes.

Serve the empanadas hot, topped with guajillo sauce for added flavor.
