    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the cubed breakfast potatoes, season with salt and pepper, and cook until golden and crispy, about 10-15 minutes. Stir occasionally.

    In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the beef tenderloin strips and chorizo, cooking until browned and cooked through, about 5-7 minutes. Add the sliced bell pepper and onion, cooking until softened, about 3-5 minutes.

    Fry the Eggs

    In a separate pan, fry the eggs sunny side up to your desired doneness, about 3-4 minutes.

    Heat the blue corn tortillas in a dry skillet until warm. Place each tortilla on a plate, top with the beef and chorizo mixture, a sunny-side-up egg, pico de gallo, guacamole, crumbled feta, and a dollop of crème fraîche.
