Method

Making the Biscuits

    Prepare the Dough

    Preheat the oven to 425°F (220°C). In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.

    Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick round. Cut into rounds and place on a baking sheet. Bake for about 15-20 minutes until golden.

Making the Sausage Gravy

    In a skillet over medium heat, cook the sausage until browned and crumbled. Drain excess fat if necessary.

    Sprinkle flour over the sausage and stir for 1-2 minutes. Slowly whisk in milk, bringing to a simmer. Season with salt, pepper, and red pepper flakes to taste.
