Make the Housemade Tagliatelle
In a large mixing bowl, combine the flour and salt. Make a well in the center, crack in 2 eggs, and mix until a dough forms. Knead for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Prepare the Arrabbiata Sauce
In a large skillet, heat the olive oil over medium heat. Add minced garlic and red chili flakes, sauté for 1-2 minutes until fragrant. Add crushed tomatoes, season with salt and black pepper, and let simmer for about 15-20 minutes.

Roll Out the Pasta
After resting, roll out the pasta dough using a pasta machine or a rolling pin until thin. Cut into tagliatelle strips.

Cook the Pasta
Bring a large pot of salted water to a boil. Cook the tagliatelle for 2-3 minutes until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Combine Pasta and Sauce
Add the cooked pasta to the skillet with the arrabbiata sauce, tossing to combine. If the sauce is too thick, add a bit of reserved pasta water to reach desired consistency.

Serve
Plate the pasta and top it with the fried eggs and grated Parmesan cheese. Serve immediately.
