Boil the Pasta
In a large pot, bring water to a boil. Add a pinch of salt and then add the elbow pasta. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Add Milk
Gradually add the milk to the roux, whisking constantly to avoid lumps. Cook for about 3-5 minutes until the mixture thickens slightly.

Incorporate Cheese
Reduce the heat to low and add the shredded cheddar cheese and cream cheese. Stir until fully melted and combined.

Season the Sauce
Add Sriracha sauce, salt, and black pepper to the cheese sauce, adjusting the amount of Sriracha to your preferred spice level. Mix well.

Mix Pasta and Sauce
In a large mixing bowl or the pot used for pasta, combine the drained elbow pasta with the cheese sauce. Stir until the pasta is thoroughly coated.

Fold in the chopped fried chicken and crumbled bacon into the pasta mixture. Stir gently to combine.

Serve the Sriracha Mac in bowls, garnished with sliced green onions and an extra drizzle of Sriracha if desired.
