Cooking the Quinoa

Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the broth is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 3 minced garlic cloves and sauté for about 1 minute until fragrant. Add 1 cup of diced bell pepper, 1 cup of halved cherry tomatoes, and 1 cup of diced zucchini. Sauté for 5-7 minutes until the vegetables are tender.
