Crust Preparation

Make the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand.

Press the crumb mixture into the bottom of a 9-inch springform pan, ensuring it is packed tightly. Bake in the preheated oven for 8-10 minutes or until lightly golden. Remove from oven and let cool.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add the granulated sugar and continue mixing until well combined.

Add Sour Cream and Vanilla
Add the sour cream and vanilla extract to the cream cheese mixture and mix until fully incorporated.

Incorporate Eggs
Add the eggs one at a time, mixing on low speed until just combined after each addition. Be careful not to overmix.

Gently fold in the seasonal fruit puree using a spatula until evenly distributed.
Baking and Cooling

Bake the Cheesecake
Pour the filling into the cooled crust. Smooth the top with a spatula. Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly.

Turn off the oven and crack the oven door. Allow the cheesecake to cool in the oven for 1 hour. Then, refrigerate for at least 4 hours or overnight until fully chilled.
