Pretzel Dough Preparation

    Activate Yeast

    In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for about 5 to 10 minutes until it becomes frothy.

    Combine Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt. Add the melted unsalted butter and the yeast mixture. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5 to 7 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

    Shape the Pretzel Poles

    Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope, about 12 inches in length.

    Boil the Pretzel Poles

    In a large pot, bring 10 cups of water and the baking soda to a boil. Boil each pretzel pole for about 30 seconds on each side, then remove and place on a baking sheet lined with parchment paper.

    Sprinkle with Salt

    Sprinkle coarse sea salt on top of each boiled pretzel pole.

    Bake

    Preheat the oven to 450°F (230°C). Bake the pretzel poles for 12 to 15 minutes, or until golden brown.

White Queso Preparation

    Make the Roux

    In a saucepan, melt 2 tablespoons of unsalted butter over medium heat. Add the all-purpose flour and whisk continuously for about 1 minute until it forms a roux.

    Gradually whisk in the milk and continue to cook, stirring constantly, until the mixture thickens.

    Incorporate Cheese

    Reduce the heat to low and add the shredded white cheddar cheese and cream cheese. Stir until melted and smooth.

    Add Flavor

    Stir in the diced green chilies, and season with salt and ground cumin to taste. Keep warm until ready to serve.
