    Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

    While the quinoa is cooking, chop the red bell pepper, cucumber, and halve the cherry tomatoes. Set aside. Wash the spinach thoroughly, and if the leaves are large, tear them into bite-sized pieces.

    Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Slice or dice the avocado according to your preference.
