Schnitzel Preparation

Prepare the Pork Tenderloin
Slice the boneless pork tenderloin into ½ inch thick medallions. Tenderize each piece with a meat mallet until they are about ¼ inch thick.

Batter the Medallions
Set up your breading station with three shallow dishes: one with flour mixed with salt and black pepper, one with beaten eggs, and one with breadcrumbs.

Coat the Pork
Dredge each medallion in flour, shaking off excess, then dip in the egg mixture, and finally coat with breadcrumbs. Ensure they are well coated.

Fry the Schnitzels
In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded medallions for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.
