Prepare the Enchilada Filling

    Cook the Meat

    In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon as it cooks, about 5-7 minutes. Drain excess fat.

    Add Vegetables and Spices

    Add the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent. Stir in the chili powder, cumin, salt, and pepper, cooking for an additional 2 minutes.

    Assemble the Enchiladas

    In a separate bowl, mix the cooked meat with the shredded cheese. Take a corn tortilla, place a spoonful of the filling in the center, roll it up tightly, and place it seam-side down on a plate. Repeat with all tortillas.

Fry the Enchilada Bites

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for best results.

    Fry the Enchiladas

    Carefully add the rolled enchiladas to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

    Serve

    Plate the fried enchilada bites and serve with enchilada sauce, sour cream, and salsa on the side for dipping.
