Preparation of Ingredients

    Cook Breakfast Potatoes

    In a skillet over medium heat, cook the breakfast potatoes until golden and tender, about 10-15 minutes. Season with salt and set aside.

    Prepare Tomatoes

    Dice the medium tomato and set aside for filling.

    Cook Country Ham

    In the same skillet, add the country ham and cook until heated through, about 3-5 minutes. Remove from heat.

Cooking Eggs

    Scramble Eggs

    In a bowl, whisk together 4 whole eggs with a pinch of salt. In a non-stick skillet, scramble the eggs over medium-low heat until just set. Remove from heat.

Making Hollandaise Sauce

    Prepare Hollandaise

    In a heatproof bowl, whisk together 3 egg yolks and 1 tablespoon of lemon juice. Place the bowl over a saucepan of simmering water (double boiler). Slowly whisk in 1 cup of melted unsalted butter until the mixture thickens. Season with salt and a pinch of cayenne pepper.

Assembling the Burrito

    Fill the Tortilla

    On the center of the giant tortilla, layer the scrambled eggs, cooked country ham, breakfast potatoes, diced tomatoes, and cheddar cheese.

    Roll the Burrito

    Fold in the sides of the tortilla and then roll from the bottom up to create a burrito. Ensure all fillings are tightly wrapped.

    Top with Hollandaise

    Place the burrito on a serving plate and generously smother it with the prepared hollandaise sauce.
