Crust Preparation

Preheat the Oven
Preheat your oven to 325°F (163°C).

Mix the Crust Ingredients
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Use the back of a measuring cup for a smooth finish.

Bake the Crust
Bake the crust in the preheated oven for 8-10 minutes until lightly golden. Remove from the oven and let cool slightly before adding the filling.
Filling Preparation

Prepare the Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Add Sugar and Mix
Gradually add the granulated sugar to the cream cheese, continuing to beat until well combined.

Incorporate Sour Cream and Vanilla
Add the sour cream and vanilla extract, and mix until fully incorporated.

Add the Eggs
Add the eggs one at a time, mixing on low speed after each addition just until combined. Avoid overmixing.

Sprinkle in the all-purpose flour and mix on low speed until just combined. Ensure there are no lumps.

Pour the Filling
Carefully pour the cheesecake filling over the cooled crust in the springform pan.

Bake the Cheesecake
Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, letting the cheesecake cool in the oven for 1 hour.

Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.
