For the Pastry Dough

    Make the Dough

    In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Shape into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

For the Beef Filling

    Cook the Filling

    In a large skillet, brown the ground beef over medium heat. Drain excess fat. Add the chopped onion, grated carrot, and minced garlic. Cook until vegetables are softened. Stir in beef broth, Worcestershire sauce, thyme, black pepper, and salt. Simmer for about 10 minutes until thickened. Let cool slightly.

For the Colcannon Mashed Potatoes

    Prepare the Mashed Potatoes

    Boil the potatoes in salted water until tender. Drain and return to the pot. In a separate pan, sauté the chopped cabbage in butter until softened. Add the cabbage and green onions to the potatoes. Mash together with milk and salt to taste.

For the Guinness Gravy

    Make the Gravy

    In a saucepan, melt the butter over medium heat. Stir in the flour to create a roux, cooking for about 2 minutes. Gradually whisk in Guinness and beef broth. Add soy sauce and black pepper. Simmer until thickened, about 5 minutes.

Assembling the Butte Pasty

    Fill and Bake the Pasty

    Preheat your oven to 375°F (190°C). Roll out the pastry dough on a floured surface to about 1/8 inch thick. Cut into large circles. Place a generous scoop of beef filling and a scoop of colcannon on one half of the circle. Fold the pastry over, crimping the edges to seal. Place on a baking sheet and bake for 30-35 minutes or until golden brown.

    Serve with Gravy

    Slice the Butte Pasty in half and serve hot, drizzled with the Guinness gravy.
