Tortilla Chips

Fry the Tortilla Chips
Cut the corn tortillas into triangles. Heat vegetable oil in a deep frying pan over medium heat. Once hot, add the tortilla triangles in batches and fry until golden and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and place on a paper towel-lined plate. Sprinkle with salt while still warm.

Prepare the Chicken
Preheat the oven to 400°F (200°C). In a bowl, whisk together the flour and eggs. Dip each chicken breast in the flour mixture, then coat with panko breadcrumbs. Place on a baking sheet and bake for 20-25 minutes until cooked through and crispy. Once cooked, chop the chicken into bite-sized pieces and toss with buffalo sauce.

Make the White Queso
In a saucepan over medium heat, combine the white cheddar cheese, cream cheese, and milk. Stir continuously until melted and smooth. Add the jalapeños and mix well. Keep warm on low heat.

Layer the Nachos
On a large serving platter, arrange a layer of tortilla chips. Drizzle with white queso, followed by the buffalo chicken, chopped onions, diced tomatoes, black beans, and black olives. Repeat the layers if desired.

Serve the nachos hot with salsa, sour cream, and guacamole on the side for dipping.
