Method

Prep the Ingredients

  1. 1

    Cook the Meat

If using bacon or sausage, cook it in a skillet over medium heat until fully cooked. Drain and chop into small pieces.

  2. 2

    Beat the Eggs

In a large bowl, crack the eggs and add salt and black pepper. Whisk together until well combined.

  3. 3

    Grate the Cheese

If using block cheese, grate it using a cheese grater until you have 1 cup of shredded cheese.

Cook the Burrito Filling

  1. 4

    Scramble the Eggs

Heat a non-stick skillet over medium heat and add the beaten eggs. Stir gently until the eggs are fully cooked and fluffy, about 5-7 minutes.

  2. 5

    Combine Ingredients

Once the eggs are scrambled, add the cooked meat and grated cheese to the skillet. Stir until the cheese is melted and everything is well combined.

Assemble the Burritos

  1. 6

    Fill the Tortillas

Warm the flour tortillas in a microwave or on a dry skillet until pliable. Place a portion of the egg mixture in the center of each tortilla.

  2. 7

    Roll the Burritos

Fold in the sides of the tortilla and then roll from the bottom to the top to form a burrito. Repeat with remaining tortillas.

Serve

  1. 8

    Add Toppings

Serve the burritos warm with optional toppings such as sour cream, salsa, chopped cilantro, and sliced avocado.
