Pimento Cheese

    Make the pimento cheese

    In a medium bowl, combine the softened cream cheese and mayonnaise with a rubber spatula until smooth. Fold in the grated sharp cheddar and chopped roasted pimentos. Add smoked paprika, lemon juice, hot sauce (if using), salt, and pepper. Mix until evenly combined but still slightly chunky. Taste and adjust seasoning. Cover and refrigerate while you prepare the rest (can be made up to 1 day ahead).

Bacon & Fried Green Tomatoes

    Cook the Duroc bacon

    Place bacon slices in a single layer on a baking sheet lined with foil or parchment. Bake in a preheated 400°F (200°C) oven for 12–18 minutes, turning once if desired, until crisp but not brittle. Remove to a paper-towel-lined plate to drain and keep warm. Alternatively, pan-fry over medium heat until crisp, then drain.

    Prepare tomatoes

    Slice tomatoes into 1/2" rounds. Place the slices on paper towels, sprinkle a light pinch of salt on both sides, and let drain for 5 minutes. Pat dry gently.

    Batter and dredge

    Whisk the egg into the buttermilk in a shallow bowl. In another shallow bowl, combine the all-purpose flour, cornmeal, 1 tsp kosher salt, and 1/2 tsp black pepper. Dip each tomato slice into the buttermilk-egg mixture, letting excess drip off, then dredge in the flour-cornmeal mixture, pressing lightly so the coating adheres. Set on a tray while you heat the oil.

    Fry tomatoes

    Pour neutral oil into a 10–12" skillet to a depth of about 1/4–1/2" and heat over medium-high until it reaches 350°F (175°C) or a drop of batter sizzles immediately. Fry 2–3 tomato slices at a time, without crowding, until golden brown on the bottom (about 2–3 minutes), then flip and cook the other side 1–2 minutes. Transfer to a wire rack or paper towel-lined plate; sprinkle a light pinch of salt while hot. Keep warm in a low oven (200°F / 95°C) if needed.

Buns & Assembly

    Prepare slider buns

    Preheat oven to 350°F (175°C) if not already on. Slice the slider buns in half horizontally. Brush the cut sides lightly with melted butter. Place cut-side-up on a baking sheet and warm in the oven for 3–5 minutes until lightly toasted. Remove and keep warm.

    Assemble sliders

    Spread about 1 heaping tablespoon of pimento cheese on the bottom half of each bun. Place one lettuce leaf over the cheese, then fold or trim to fit. Add one slice of crispy Duroc bacon, then top with one fried tomato round. Spoon another 1/2 tablespoon pimento cheese onto the top bun (optional) and close the slider. Repeat for all sliders.

    Finish and serve

    Arrange sliders on a platter, garnish optionally with chopped chives or parsley, and serve immediately while the fried tomatoes and bacon are warm. Provide extra pimento cheese on the side if desired.
