1. Prepare Sweet Potatoes

Peel and cube the sweet potatoes. Boil them in water until tender, about 15-20 minutes. Drain and mash until smooth. Allow to cool slightly.

2. Make the Dough

In a large bowl, combine the mashed sweet potatoes, flour, baking powder, cinnamon, nutmeg, salt, sugar, and vanilla extract. Mix until a soft dough forms.

3. Fry the Beignets

Heat vegetable oil in a deep pot over medium-high heat. Once hot, drop spoonfuls of the dough into the oil. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

4. Prepare Whipped Ricotta

In a medium bowl, beat the ricotta cheese with heavy cream and honey until fluffy and smooth.

5. Serve

Serve the warm beignets with a side of pepper jelly and a dollop of whipped ricotta.
