    Prepare the Short Ribs

    Season the Angus beef short ribs with salt and black pepper. Heat olive oil in a large Dutch oven over medium-high heat. Sear the short ribs on all sides until browned, about 4-5 minutes per side. Remove the ribs and set aside.

    Sauté the Onions

    In the same pot, add sliced onions and cook until they are caramelized, about 10-15 minutes. Stir occasionally to avoid burning.

    Braise the Ribs

    Add garlic to the onions and sauté for another minute. Return the short ribs to the pot, add beef broth, and thyme. Bring to a simmer, cover, and braise in the oven at 300°F (150°C) for 2.5 to 3 hours or until the meat is tender.

    Shred the Meat

    Once cooked, remove the short ribs from the pot and shred the meat using two forks. Discard any bones and excess fat.

    Assemble the Melt

    Slice the baguette in half lengthwise and toast lightly. Spread mayonnaise on both sides of the baguette. Layer the shredded short rib, provolone cheese, caramelized onions, and spicy pepperonata on the bottom half of the baguette.

    Melt and Serve

    Place the assembled baguette under a broiler until the cheese is melted and bubbly. Close the sandwich and slice into portions. Serve warm.
