    Prepare the Fries

    Preheat the oven to 425°F (220°C). Cut the potatoes into thin strips and soak them in cold water for at least 30 minutes. Drain and pat dry.

    Cook the Fries

    Toss the potato strips with olive oil and salt. Spread them on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway through, until golden and crispy. Remove from oven and toss with grated Parmigiano-Reggiano cheese.

    Cook the Steak

    Season the teres major steak with salt and freshly cracked black pepper. Heat a skillet over medium-high heat and add butter. Once melted, add the steak and cook for 4-5 minutes on each side for medium-rare, or until your preferred doneness. Remove from skillet and let rest.

    Make the Au Poivre Sauce

    In the same skillet, add chopped shallots and cook until softened. Add crushed black peppercorns and heavy cream. Simmer for 5-7 minutes until thickened. Adjust seasoning, if necessary.

    Prepare the Salad

    In a bowl, toss arugula with a drizzle of olive oil, salt, and cracked pepper. Serve alongside the steak.

    Plate the Dish

    Slice the steak and serve it on a plate with the parm fries and arugula salad. Drizzle the au poivre sauce over the steak.
