Prepare the Grits
In a large saucepan, bring chicken broth to a boil. Add corn grits and stir well. Reduce heat to low, cover, and cook for about 20-25 minutes, stirring occasionally, until grits are creamy. Stir in shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste. Keep warm.

Cook the Lardons
In a large skillet over medium heat, add the lardons and cook until crispy. Remove the lardons and set aside, leaving the rendered fat in the skillet.

Prepare the Greens
In a separate pot, bring a small amount of water to a simmer. Add the collard greens and cook until tender, about 5-7 minutes. Drain and season with salt and pepper.

Serve
To serve, spoon a generous portion of cheese grits onto a plate. Top with the shrimp mixture, crispy lardons, and a side of braised greens.
