Ice Cream & Sorbet Base

Method

Preparation

  1. 1

    Prepare Ice Cream Base

In a medium saucepan, combine whole milk, heavy cream, and granulated sugar. Heat over medium heat until the sugar is dissolved and the mixture is warm but not boiling.

  2. 2

    Add Flavorings

Remove from heat and stir in vanilla extract and a pinch of salt. Let the mixture cool to room temperature.

  3. 3

    Chill and Churn

Once cooled, refrigerate the mixture for at least 2 hours or overnight. After chilling, churn the mixture in an ice cream maker according to the manufacturer's instructions.

  4. 4

Prepare Sorbet Base (if making sorbet)

For sorbet, blend fruit puree with sugar to taste. You can add a little water if needed to help blend.

  5. 5

    Chill Sorbet Mixture

Refrigerate the fruit mixture for at least 1 hour before churning in the ice cream maker.

  6. 6

    Freeze

Transfer the churned ice cream or sorbet to an airtight container and freeze for at least 4 hours before serving.
