Deviled Eggs with Spicy Jumbo Lump Crab

    Boil the Eggs

    Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pan, remove it from heat, and let the eggs sit for 12 minutes.

    Cool and Peel

    Transfer the eggs to a bowl of ice water to cool for about 5 minutes. Once cooled, gently tap and peel the shells under running water.

    Prepare the Filling

    Cut the eggs in half lengthwise and gently remove the yolks into a mixing bowl. Add mayonnaise, Dijon mustard, chili oil, lemon juice, salt, and black pepper to the yolks. Mix until smooth and well combined.

    Fold in Crab

    Gently fold in the jumbo lump crab meat into the yolk mixture, being careful not to break up the crab too much.

    Fill the Egg Whites

    Using a spoon or piping bag, fill the egg white halves with the crab filling.

    Garnish and Serve

    Sprinkle the filled eggs with paprika and garnish with chopped fresh chives. Drizzle with additional chili oil if desired. Serve immediately.
