Prepare the Oysters
Shuck the oysters and place them in a bowl of buttermilk. Let them soak for about 15 minutes.

Mix Dry Ingredients
In a separate bowl, combine the cornmeal, flour, salt, black pepper, and cayenne pepper.

Coat the Oysters
Remove the oysters from the buttermilk, allowing excess to drip off. Dredge each oyster in the cornmeal mixture, ensuring they are well-coated.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Oysters
Carefully add the coated oysters to the hot oil, frying in batches if necessary. Fry for about 2-3 minutes on each side, or until golden brown. Use a slotted spoon to transfer them to a paper towel-lined plate.

Serve the fried oysters hot with Creole mustard aioli on the side for dipping.
