Fried Catfish

Prepare the Catfish
Soak catfish fillets in buttermilk for at least 30 minutes. This helps to tenderize the fish and adds flavor.

Mix Dry Ingredients
In a shallow dish, combine cornmeal, flour, Cajun seasoning, salt, and black pepper. Mix well.

Heat the Oil
In a large frying pan or deep fryer, heat vegetable oil to 350°F (175°C).

Coat the Catfish
Remove catfish fillets from buttermilk, letting excess drip off. Dredge each fillet in the cornmeal mixture, ensuring an even coating.

Fry the Catfish
Carefully place coated fillets in the hot oil, cooking for about 5-7 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Coleslaw

Prepare the Vegetables
In a large bowl, combine shredded cabbage and shredded carrot.

In a separate bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Pour the dressing over the cabbage mixture and toss until well coated. Refrigerate for at least 30 minutes before serving.
Tartar Sauce

Mix Ingredients
In a small bowl, combine mayonnaise, chopped dill pickles, chopped capers, and lemon juice. Stir until well mixed.

Add salt and black pepper to taste. Adjust seasoning as desired.

Refrigerate for at least 15 minutes before serving to let flavors meld.
