Cooking the Eggs

Boil the Eggs

Place the eggs in a pot and cover them with cold water. Make sure there is at least an inch of water above the eggs. Bring the water to a boil over medium-high heat.

Simmer

Once boiling, cover the pot and remove it from heat. Let the eggs sit in the hot water for 12-14 minutes.

Cool the Eggs

After the time is up, carefully transfer the eggs to a bowl of ice water to cool for at least 5 minutes.

Peel the Eggs

Once cooled, gently tap each egg on a hard surface and peel off the shell under running water to help with the peeling process.

Cut and Scoop

Slice each egg in half lengthwise. Carefully scoop out the yolks and place them in a mixing bowl. Set the egg whites aside.

Mix the Filling

To the bowl with yolks, add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and paprika. Mash and mix until smooth and creamy.

Fill the Egg Whites

Using a spoon or piping bag, fill each egg white half with the yolk mixture.

Sprinkle paprika on top of the filled eggs and garnish with finely chopped parsley or chives.
