For the Fried Catfish

    Prepare the Catfish

    Rinse the catfish fillets under cold water and pat them dry with paper towels.

    Soak in Buttermilk

    Place the catfish fillets in a bowl and pour buttermilk over them, ensuring they are fully submerged. Let them soak for at least 30 minutes.

    Mix the Coating

    In a shallow dish, combine cornmeal, all-purpose flour, cajun seasoning, salt, and black pepper. Mix well.

    Heat the Oil

    In a large skillet, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Catfish

    Remove catfish fillets from buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture until well coated.

    Fry the Catfish

    Carefully place the coated catfish fillets in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

For the Po' Boy Assembly

    Prepare the Hoagie Rolls

    Slice the hoagie rolls lengthwise but do not cut all the way through. Leave a hinge to hold the fillings.

    Spread Mayonnaise

    Spread a thin layer of mayonnaise on the inside of each hoagie roll.

    Add Fried Catfish

    Place one fried catfish fillet inside each hoagie roll.

    Add Lettuce and Tomatoes

    Top the catfish with shredded lettuce and sliced tomatoes.

    Add Hot Sauce

    Drizzle hot sauce over the top to taste.

    Serve

    Close the hoagie rolls and serve immediately while hot.
