For the Blackened Catfish

    Prepare the Spice Mix

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, black pepper, and salt. Mix well to create a seasoning blend.

    Season the Catfish

    Pat the catfish fillets dry with paper towels. Rub both sides of each fillet generously with the spice mix.

    Heat the Oil

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Cook the Catfish

    Add the seasoned catfish fillets to the skillet. Cook for 4-5 minutes on each side until the fish is blackened and cooked through. Remove from the skillet and set aside.

    Plate the blackened catfish and serve with lemon wedges on the side.
