Method

Preparation of Base

  1. 1

    Prepare Herbal Mixture

In a large pot, combine the sassafras root bark, sarsaparilla root, wintergreen leaves, and licorice root. Pour in 4 liters of filtered water.

  2. 2

    Simmer the Base

Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer for about 30 minutes.

  3. 3

    Strain the Mixture

After simmering, strain the mixture through a fine mesh sieve or cheesecloth into a clean container to remove the solid herbs. Discard the solids.

Flavoring the Base

  1. 4

    Add Sweeteners

To the strained herbal liquid, add the brown sugar, granulated sugar, molasses, and citric acid. Stir well until all sugars are completely dissolved.

  2. 5

    Cool the Mixture

Allow the mixture to cool to room temperature before proceeding to carbonation.

Carbonation

  1. 6

    Combine with Carbonated Water

In a large beverage dispenser or pitcher, mix the cooled herbal syrup with 2 liters of carbonated water. Stir gently to combine.

  2. 7

    Serve Chilled

Serve the root beer on tap over ice or chilled as desired. Enjoy your homemade root beer!
