Preheat your oven to 350°F (175°C). In a large mixing bowl, toss the sliced apples with granulated sugar, ground cinnamon, and lemon juice until evenly coated. Transfer the apple mixture to a greased 9x13 inch baking dish.

In a separate bowl, combine rolled oats, all-purpose flour, brown sugar, melted butter, and salt. Stir until the mixture is crumbly. Evenly distribute the topping over the apple filling in the baking dish.

Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the apples are soft and the topping is golden brown. Remove from the oven and let it cool slightly.

In a medium saucepan over medium heat, melt the granulated sugar, stirring constantly until it turns a golden brown color. Carefully add the butter and stir until melted. Slowly pour in the heavy cream, stirring continuously until smooth. Remove from heat and stir in vanilla extract.
