Fruit Preparation
Prepare the Fruit
Wash the fresh peaches and blackberries. Remove the pits from the peaches and slice them into small pieces.
Combine with Sugar and Lemon
In a bowl, combine the sliced peaches and blackberries with sugar, lemon juice, and ground cinnamon. Mix gently and set aside to marinate for about 10 minutes.
Base Preparation
Make the Crust
In a medium bowl, mix the graham cracker crumbs with melted butter until fully combined. Press the mixture into the bottom of a 9-inch pie dish or tart pan evenly.
Chill the Crust
Place the crust in the refrigerator to set while you prepare the cream layer.
Cream Layer Preparation
Mix the Cream Cheese
In a large mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
Whip the Heavy Cream
In a separate bowl, whip the heavy cream until stiff peaks form.
Combine the Mixtures
Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Assembly
Layer the Mixtures
Spread the cream layer evenly over the chilled graham cracker crust. Top with the marinated peach and blackberry mixture.
Chill and Serve
Refrigerate the assembled dessert for at least 2 hours to allow it to set. Serve chilled.
