Prepare the Tortillas
Cut the corn tortillas into triangles or desired chip shapes using a sharp knife or pizza cutter.

Heat the Oil
In a large pot or deep frying pan, heat the vegetable oil over medium heat until it reaches about 350°F (175°C). You can check if the oil is hot enough by dropping in a small piece of tortilla; it should sizzle immediately.

Fry the Chips
Carefully add the tortilla triangles to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until they are golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt to taste.

Mix Ingredients
In a mixing bowl, combine the diced tomatoes, red onion, jalapeño pepper, and chopped cilantro. Squeeze the juice of the lime over the mixture.

Season the Salsa
Add salt to the salsa mixture and stir well to combine all the flavors. Adjust seasoning to taste.

Chill and Serve
Let the salsa sit for at least 15 minutes to allow the flavors to meld together. Serve with the tortilla chips.
