Preparation and Cooking

    Roasting the Chicken

    Preheat the oven to 425°F (220°C). Pat the half chicken dry with paper towels, and season generously with salt and black pepper, both inside and out. Place the chicken breast side up in a roasting pan.

    Adding Vegetables and Bacon

    In a bowl, toss the sliced apples, quartered onion, and green beans with olive oil, salt, and pepper. Spread the vegetables around the chicken in the roasting pan, and scatter the chopped bacon on top of the chicken.

    Roasting

    Roast the chicken in the preheated oven for about 1 hour, or until the chicken is golden brown and the internal temperature reaches 165°F (75°C). Stir the vegetables halfway through cooking.

    Making the Pan Sauce

    Remove the chicken and vegetables from the roasting pan and cover them loosely with foil to keep warm. Pour off excess fat from the pan, leaving about 1 tablespoon. Place the pan over medium heat, add minced garlic and sauté for 1 minute. Then add chicken broth and bring to a simmer, scraping up any brown bits. Stir in butter until melted and smooth.

    Carve the chicken and serve it with the roasted apples, onions, green beans, and drizzle the pan sauce over the top.
