Steak and Accompaniments

Method

Preparation

  1. 1

    Marinate the Steak

In a bowl, mix together the orange juice, lime juice, minced garlic, cumin, salt, and black pepper. Add the steak and ensure it's fully coated. Cover and refrigerate for at least 1 hour, or up to overnight.

  2. 2

    Prepare the Guacamole

In a bowl, mash the avocados. Add lime juice, salt to taste, and mix until smooth. Adjust seasoning as desired.

  3. 3

    Make the Pico de Gallo

In a separate bowl, combine diced tomatoes, red onion, cilantro, and minced jalapeño. Season with salt and mix well.

  4. 4

    Cook the Steak

Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and discard the marinade. Grill or sear the steak for 4-5 minutes on each side, or until desired doneness. Let rest for 5 minutes.

  5. 5

    Serve

Slice the steak against the grain and serve with guacamole, crumbled queso fresco, pico de gallo, and salsa roja on the side.
