Pork Carnitas

Prepare the Pork
In a large slow cooker, combine pork shoulder, salt, cumin, oregano, garlic, orange juice, lime juice, and bay leaves. Cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Remove the pork from the slow cooker and shred it using two forks. Return to the cooker and let it soak in the juices for an additional 30 minutes.

Roast the Ingredients
Preheat the oven to 425°F (220°C). Place tomatillos, jalapeño, garlic, and onion on a baking sheet and roast for 15-20 minutes until they are charred.

Blend Salsa
Allow the roasted ingredients to cool slightly, then blend them together with lime juice and salt until smooth.
Pickled Red Onions

Pickle the Onions
Thinly slice the red onion. In a small saucepan, combine apple cider vinegar, sugar, and salt. Heat until the sugar dissolves, then pour over the onions in a jar. Let sit for at least 30 minutes before serving.
