Make the Chips
Heat the vegetable oil in a large pot over medium heat. Cut the corn tortillas into triangles. Once the oil is hot, fry the tortilla triangles in batches until golden brown and crispy, about 2-3 minutes per batch. Remove and place on a paper towel-lined plate to drain excess oil, and sprinkle with salt.

Prepare the Queso
In a saucepan over medium heat, combine the cheddar cheese, cream cheese, and milk. Stir until melted and smooth. Add the diced tomatoes, jalapeños, cumin, garlic powder, onion powder, and pepper. Stir until well combined and heated through.

Serve the warm queso alongside the freshly made tortilla chips for dipping.
