Baja Fish Preparation

Prepare the Slaw
In a large bowl, combine shredded cabbage, shredded carrot, and lime juice. Toss well and set aside to marinate while you prepare the fish.

Make the Beer Batter
In a mixing bowl, whisk together flour, baking powder, salt, and beer until smooth. Let the batter rest for about 10 minutes.

Heat the Oil
In a deep skillet or fryer, heat oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish
Dip each fish fillet into the beer batter, ensuring it is fully coated.

Fry the Fish
Carefully place the battered fish into the hot oil. Fry in batches for about 3-4 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Dish
On a serving plate, place the fried fish, add a generous amount of slaw on top, drizzle with orange sauce, and serve with pico de gallo and crema on the side.
