Method

Crust Preparation

  1. 1

    Make the Dough

In a large bowl, combine the flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough holds together.

  2. 2

    Chill the Dough

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Tomato Confit

  1. 3

    Prepare the Tomatoes

Preheat the oven to 300°F (150°C). In a baking dish, combine cherry tomatoes, garlic cloves, olive oil, salt, and pepper. Toss to coat and bake for 1 hour, or until the tomatoes are soft and bursting.

Assemble and Bake

  1. 4

    Roll Out the Dough

On a floured surface, roll out the chilled dough to fit a tart pan. Transfer the dough to the pan, trimming any excess.

  2. 5

    Add Goat Cheese

Spread the soft goat cheese over the crust. Sprinkle with chopped thyme and drizzle with olive oil.

  3. 6

    Add Confit Tomatoes

Top the goat cheese with the confit tomatoes, distributing evenly.

  4. 7

    Bake

Bake in the preheated oven for 25-30 minutes, or until the crust is golden and the cheese is warm.

Serve

  1. 8

    Prepare Antipasti

While the tart is baking, prepare antipasti by arranging olives, roasted red peppers, artichoke hearts, and fresh basil on a platter.

  2. 9

    Serve Warm

Remove the tart from the oven, let it cool for a few minutes, then slice and serve warm with the antipasti on the side.
