Preparing the Foie Gras

Marinate the Foie Gras

In a bowl, combine the duck liver with cognac, salt, white pepper, and thyme. Cover and let marinate in the refrigerator for at least 4 hours, preferably overnight.

Wrap the Foie Gras

Remove the liver from the marinade and drain excess liquid. Place the liver on a piece of cheesecloth, fold it over, and roll tightly to form a log. Tie the ends securely.

Poach the Foie Gras

Bring a pot of water to a simmer. Gently place the wrapped foie gras in the water and poach for about 20 minutes. Remove and let cool completely in the refrigerator.

Cook the Chutney

In a saucepan, combine pears, onion, brown sugar, white vinegar, ginger, cinnamon stick, and salt. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the mixture thickens.

Cool the Chutney

Remove from heat and let the chutney cool. Discard the cinnamon stick.
