Cooking Instructions
Prepare the Rapini
Rinse the rapini under cold water and trim the ends. If the stems are particularly thick, you may want to slice them in half lengthwise.
Blanch the Rapini
Bring a large pot of salted water to a boil. Add the rapini and blanch for 2-3 minutes until bright green and tender. Drain and immediately transfer to an ice bath to stop the cooking process.
Sauté the Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to let it brown.
Add Lemon
Zest the lemon and squeeze the juice over the rapini. Toss everything together to combine and remove from heat.
Serve
Transfer the rapini to a serving platter and serve warm as a side dish.
