Beef Preparation

1

Sear the Beef

In a large pot, heat olive oil over medium-high heat. Season the beef shank with salt and black pepper. Sear the beef on all sides until browned. Remove and set aside.

2

Cook Vegetables

In the same pot, add chopped onions, carrots, and minced garlic. Sauté for about 5 minutes until softened.

3

Braise the Beef

Return the beef to the pot. Add the red wine, beef broth, thyme, and bay leaves. Bring to a simmer, then cover and reduce heat to low. Cook for 2.5 to 3 hours until the beef is tender.

Mashed Potatoes Preparation

4

Boil Potatoes

Peel and chop the potatoes into chunks. Boil in salted water until tender, about 20 minutes.

5

Mash Potatoes

Drain the potatoes and return to the pot. Add butter, milk, and salt. Mash until creamy and smooth.

Green Beans and Bacon Preparation

6

Cook Bacon

In a skillet, heat olive oil over medium heat. Add bacon lardons and cook until crispy. Remove and drain on paper towels.

7

Sauté Green Beans

In the same skillet, add the green beans and sauté for about 5-7 minutes until tender. Season with salt and pepper.

8

Combine

Toss the sautéed green beans with the crispy bacon lardons before serving.
