Main Ingredients

Method

Cooking the Soup

  1. 1

    Sauté the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 20-25 minutes.

  2. 2

    Add Liquids

Pour in the dry white wine to deglaze the pot, scraping up any browned bits from the bottom. Allow the wine to reduce for about 5 minutes.

  3. 3

    Simmer the Soup

Add the beef broth, bay leaves, thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 30-40 minutes.

Preparing the Toppings

  1. 4

    Prepare the Bread

While the soup is simmering, preheat your oven to 350°F (175°C). Toast the slices of baguette until lightly golden.

  2. 5

    Assemble the Soup

Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls, place a toasted slice of baguette on top of each bowl, and generously sprinkle with Gruyère cheese.

Finishing Touches

  1. 6

    Broil the Soup

Place the assembled bowls under the broiler for about 3-5 minutes, or until the cheese is bubbly and golden brown. Keep an eye on it to prevent burning.

  2. 7

    Serve

Carefully remove the bowls from the oven and let them cool slightly before serving. Enjoy your Soupe à l’oignon gratinée!
