Prepare the Cake

Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare Pineapple Topping
In a round cake pan, melt the butter over low heat. Add the brown sugar and stir until combined. Arrange the pineapple slices on top of the sugar mixture, then set aside.

In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. In another bowl, mix the milk, vanilla extract, and eggs together. Combine the wet and dry ingredients until just mixed.

Pour the batter over the pineapple slices in the cake pan. Bake for 30-35 minutes or until a toothpick comes out clean. Allow to cool for a few minutes before inverting onto a plate.
Prepare the Crème Anglaise

In a saucepan, heat the heavy cream and the scraped vanilla bean over medium heat until just simmering.
