Gnocchi Preparation

    Cook the Potatoes

    Boil the russet potatoes in salted water until fork-tender, about 20 minutes. Drain and let cool slightly. Peel and mash the potatoes until smooth.

    Make the Gnocchi Dough

    In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms. If too sticky, add more flour as needed.

    Shape the Gnocchi

    Divide the dough into sections. Roll each section into long ropes about 1/2 inch thick. Cut into 1-inch pieces and shape with a fork.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add gnocchi and cook until they float to the surface, about 2-3 minutes. Remove and set aside.

    In a saucepan, heat heavy cream over medium heat. Add minced garlic and cook for 1 minute. Stir in grated Parmesan cheese, black pepper, and salt. Cook until cheese is melted and sauce is smooth.

    Steam broccoli florets until tender, about 5 minutes. If using canned artichokes, drain and heat them in a skillet for 3-4 minutes.

    In a large serving bowl, combine the cooked gnocchi, steamed broccoli, and heated artichokes. Pour the Parmesan sauce over the top and toss gently to combine.
