Method

Cooking the Pasta

  1. 1

    Boil the Pappardelle

In a large pot, bring salted water to a boil. Add the pappardelle and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Preparing the Mushroom Mixture

  1. 2

    Sauté the Pancetta

In a large skillet over medium heat, add the diced pancetta and cook until crispy, about 4-5 minutes. Remove and set aside.

  2. 3

    Cook the Mushrooms

In the same skillet, add olive oil and heat over medium-high. Add the minced garlic and cook for about 1 minute until fragrant. Then add the mixed mushrooms, thyme, salt, and black pepper. Sauté until the mushrooms are tender and browned, about 7-10 minutes.

Combining Ingredients

  1. 4

    Combine Everything

Add the cooked pappardelle to the skillet with the mushrooms. Toss to combine, adding reserved pasta water as needed to create a light sauce. Stir in the crispy pancetta and pine nuts. Adjust seasoning with additional salt and pepper if needed.

  2. 5

    Serve

Plate the pappardelle and top with grated Parmesan cheese and chopped parsley. Serve immediately.
