Beef

Shallot Sauce

Method

Prepare the Frites

  1. 1

    Fry the Potatoes

Heat vegetable oil in a deep pan to 180°C. Add the cut potatoes in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt to taste.

Cook the Onglet

  1. 2

    Grill the Beef

Season the onglet with salt and black pepper. Heat a grill pan over high heat and add olive oil. Grill the steak for about 3-4 minutes on each side for medium-rare. Remove from the heat and let rest for a few minutes before slicing.

Prepare the Shallot Sauce

  1. 3

    Make the Sauce

In a saucepan, melt butter over medium heat. Add the chopped shallots and sauté until soft and translucent, about 3 minutes. Pour in the red wine and bring to a boil, scraping up any browned bits. Reduce by half, then add the beef stock and thyme. Simmer until the sauce thickens slightly.

Serve

  1. 4

    Plating

Slice the grilled onglet and serve it on a plate drizzled with shallot sauce alongside the homemade frites.
