Preparation of Fries

    Prepare the Potatoes

    Peel and cut the potatoes into fries. Soak them in water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat oil in a deep fryer or a heavy pot. Drain the potatoes and dry them with a towel. Fry the potatoes in batches until golden brown, about 5-7 minutes. Remove and place on paper towels to drain excess oil. Season with salt.

Cooking the Beef

    Prepare the Steak

    Rub the onglet de boeuf with olive oil, salt, and black pepper. Let it sit at room temperature for about 20 minutes.

    Grill the Steak

    Preheat the grill or a grill pan over medium-high heat. Cook the steak for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes.

Shallot Sauce Preparation

    Make the Sauce

    In a saucepan, melt the butter over medium heat. Add finely chopped shallots and sauté until translucent. Pour in the red wine and allow to simmer until reduced by half. Stir in chopped fresh parsley before serving.

    Slice the rested steak against the grain. Serve with homemade fries and drizzle with shallot sauce.
