Mussels in Broth

Method

Prepare the Mussels

  1. 1

    Clean the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any debris. Remove the beards if present.

  2. 2

    Sauté Aromatics

In a large pot, heat olive oil over medium heat. Add shallots and garlic, and sauté until soft and fragrant, about 3-4 minutes.

  3. 3

    Add Liquids

Pour in the white wine and pastis, bringing the mixture to a gentle boil.

  4. 4

    Cook the Mussels

Add the cleaned mussels to the pot, cover, and steam for about 5-7 minutes, or until the mussels have opened. Discard any that remain closed.

  5. 5

    Finish the Broth

Stir in the heavy cream and fresh parsley, and season with salt and black pepper to taste. Heat through.

Prepare the House Fries

  1. 6

    Heat the Oil

In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

  2. 7

    Fry the Potatoes

Carefully add the cut potatoes to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes.

  3. 8

    Drain and Season

Remove the fries with a slotted spoon and drain on paper towels. Season with salt to taste.
